Disneyland Resort has the most simulator rides.
-Star Tours
-Indiana Jones (Yes, this is a simulator even though it is on a track.)
-Soarin' over California
-Honey, I Shrunk the Audience (It's a show but whenever a person walks by the shrunken audience, the seats on the platform bounces around to stimulate what it's like to be small)

Sea World
-Wild Arctic

There's none at Knott's.

Looks like there are only a few:

Sea World in San Diego has "Wild Arctic Ride" a simulated Helicopter ride.

Disneyland has "Star Tours" a simulated space fight; and DCA has "Soarin' Over California" a simulated hang glider ride.

Universal Studios Hollywood used to have "Back to the Future", but that was recently removed.
