All you have to do is work backwards. Find a line that indicates their personality and quote it. Easy. Think!

Pay some attention to the text. And don't ask other people to do your homework for you. The three characters you mention don't even appear in Act One, Scene Two. Lady Capulet and the Nurse appear in Act One, Scene Three, and Mercutio appears in Act One, Scene Four. Read those scenes. What do the characters say? How do they relate to the other characters in their scenes? What do they want? What are they trying to accomplish? What can you tell about their personalities? The answers to your questions are right there on the page.
