Gotta be 'Mr Hudson and the Library'. They've only done one album but the lead singer was a really famous producer who had already made a fortune without needing to step into the limelight, so therefore has not made a band because he needs to but because he wants to and you can so tell from the music. Have a listen, they're excellent!
Also love The Kooks, Hard-Fi, The Streets, The Klaxons, Devendra Banhart...the list is endless.

I can't pick just one...so I'll say Don Henley, Journey, Sugarland and Martina McBride...their singing abilities are REAL (so rare in this day and age), and their lyrics really resonate with me. Plus, their melodies are stellar.
