If you are planning on inserting an essay I would say that the content and the font are far less important than the quality of the paper and how tightly you can roll it up. I'd go for something glossy rolled up to absolutely no more than an inch diameter.

I'm not sure what exactly you're inserting an essay into, but usually when you are writing something and you want to quote a work other than yours that is longer than say, 3 lines, you would indent it on both sides. That way it stands apart without you having to use italics.

I would find a page of italics annoying, but what do I know...
EDIT: I basicaly agree with Penfold with some minor remarks. Use 80 lb paper (as it is much stiffer than 20 lb stock), make sure it is cold-pressed, if you know what I mean, it should have 100% cotton content for ease of essay insertion and it should have a watermark, I suggest Penfold's avatar.

Indentation and single-spaced lines is your answer.
Use italics if you have a big typographic project, you know, like Mark Danielewski (Only Revolutions).

One page is fine....it's been done over and over again. Like the bear said, it's your quality work that counts--not the font.
