Sucrase will separate both sucrose (sugar) and sucralose (Splenda). Can it do this because the enzyme isn't 100% specific to sucrose, or is it because it can't tell the difference between sugar and Splenda? Thanks!

You are saying the same thing. The enzyme would not be 100% specific for sucrose if it works on other substrates (e.g. Splenda).
