Some people just have to work on those days--there are services that need to be going 24/7. Some examples are: doctors, nurses, firefighters, ambulance drivers, paramedics, police, airline pilots, air traffic controllers, restaurant employees, hotel employees, airport/train/bus employees.

I work all of those days in a hotel. That's why I find this question and your other about working on Thanksgiving odd. Hotels are 24/7/365 businesses. We're doing a full days business every single day, holiday or not. You've gotten very lucky to not have to work any holidays this year unless you work at a strange hotel that closes its doors on holidays. We also don't get paid here unless we work that day.

Some places just have to. If they shut down a nursing home or hospital it would have really bad consequences. Gas stations, hotels, grocery stores are open for convienience but not necessary! I work in the Activities department at a nursing home and we do special meals for every holiday, only one of the 5 of us works each holiday - I had New Years and Easter.
