Probably because that's what it was called in Old english, or maybe French, or Germanic (all langueages that formed our own). Or it could be dialectic: there was a time when people in England didn't all speak the same form of English. In one spot, plural nouns could be formed by adding -ren to the word, whereas in another spot adding -s would form the plural: that's why we say children today, instead of childs (and that explain why Julia Childs has that last name). As such, that could be the reason deer meat is called venison: Some group just called it that, and then that got assimilated into the main language which we now call modern English.
Or it could be a division between the classes. In england a long time ago, the higher class tended to use a lot of french with their english, and would consider the poor people's language vulgar. That's why we call cow meat beef or steak-steak was what the higher class called it (same wthing with veal, instead of calf), and people emulated them. So, maybe the higher class peoples called deer venison, and it caught on. So, in summary, there are many reasons why, but no one really knows, except maybe linguists.

The word venison comes from the Old French, meaning the meat of any large game animal. Currently, it primarily refers to the meat of deer, but is also often applied to wild boar meat.
In the case of elk and bison, because these animals have mostly been hunted in North America, it doesn't have the same Medieval associations with deer meat, and so is usually actually called after the actual animal it came from.
In English, there are often different names for the meat of an animal than there is for the animal itself - i.e. mutton for sheep, beef for cow, poultry for chicken, etc. This is a remnant of the French Norman conquest of Britain in the 11th century - where the French rulers would normally be eating the meat, while the Saxon serfs and farmers were the ones actually raising the animals.

A great deal depends on how the meat is butchered and cooked, of course, but a lot also depends on the animal's diet. Midwestern whitetail can taste like good lean beef while western mule deer have a note of sage brush that I've never gotten used to. I do like elk if it's prepared correctly even better than whitetail. There are a number of restaurants around the country that specialize in wild game, so you should be able to arrange a tasting for yourself at some point without having to hunt the meat yourself.

Technicalities to confuse and amuse... That is the English language's greatest downfall, though it has cost us, my dear.
Goodness knows what it would have been like in a small town a few centuries back in little Britain, had we have had common people and some rather large animals.
Imagine dirty little Johnny being sent down to the market to get some meat, only to come back having brought pork scratchings, and get greeted by his father ..
"I told you to BISON thing DEER, god ELK me, and all you come back with is something that resembles your Mother"
Deer meat is indeed expensive in the UK, and is called Venison to encourage posh people to speak out at dinner parties and to boast about venison hunting parties, whilst not having a clue what they are talking about.

After reading some of the guesses, I had to look it up. According to wikipedia elk and bison are venison. You should look it up its quite interesting. Venison is the English for any hunted animal. Wow

interesting question, but i could only theorize.
i'm guessing that there are many types of deer. far too many to count, so they make one name for their whole group.
deer meat would just be too narrow and specific of a name.
venison seems to describe every animal that is related to the deer.
thats my ridiculous theory.
=)

I guess for the same reason that cow meat is called beef, pig meat is called pork, and chicken meat is called poultry...IT JUST IS.
Actually, that's my explanation for most questions I don't know the answer to...I don't know the answer to many questions. LOL
