Sure it is possible. The major international airports in Italy are Rome and Milan, in Greece Athens. If you are not flying in from another European country, it will probably cost less to buy a ticket that enters and exits Europe at the same airport.
I'd suggest flying into Milan, sight-see, shop and pick up some great fashion pieces for 2 days, then fly or take a train to Venice for 3 days.

Everything is possible, if you have the time and money. Venice and Milan are quite close, so you can fly to Milan and take the train to Venice from there. Capri is not so easy to combine, but you can also find some transport within Italy to Capri. Then you take the plane from Rome or Venice or Milan to Athens. Or you take the ferry from Brindisi or Ancona to Patra and then a bus to Athens, but I'd prefer flying. I suggest you stay in Athens for 2-3 days, and then take a ferry -or plane- to Santorini. I wouldn't advise you to take an organised cruise, you would spend most of the time on a boat, missing the nice beaches and vernacular villages of the islands. Choose a few islands on the same ferry line or connected between them with fast ferries (blue star or high speed), e.g. Paros, Syros, Myconos and visit them one after another.
