I love turkey pot pie's but I use rolled out pillsberry crescent roll dough for the crust, and use mashed potatoes to top it (like a shepards pie)

Turkey soup~ I always simmer the carcass over low heat all night, so I have plenty of broth.

Turkey, stuffing & cranberry open faced sammies

Turkey tetrezinni~I take 2 cans of cream of onion soup, one can of water, bag of frozen boccoli turkey & cooked pasta, simmer untill heated through

We only have 4 of us and we always have ALOT of leftovers...even with a small turkey.

My mom made different types of turkey pie and we loved it.
Here's an easy recipe.

Ingredients
1 ready to bake refrigerated pie crust
2 cups chopped cooked turkey
1 sm onion, diced
1 TBSP sage
3 TBSP flour
4 TBSP butter
2 cups chicken broth

Directions
Preheat oven to 450 degrees
Saute onions, with sage in 1 TBSP of the butter until softened
Add turkey to mixture and put into pie plate
In same pan, melt remaining butter while stirring in flour - it will make a gritty paste
Stir in broth slowly to make a thick sauce.
Pour over turkey mixture
Top with crust and brush top with milk
Bake until top is golden brown - about 20 minutes - and serve

my mom makes some casserole dish using turkey, noodles, egg, green pepper, bread crumbs, milk and shredded cheese. I think that's all thats in it, but I don't remember the quantities exactly. it's so good! email me if you want the exact recipe, i can look it up at home. I like to make turkey sandwiches too on toast and mayo.

Get a pie crust, mix leftover turkey with mashed potatoes, carrotts, etc....put mixture on half of the pie crust and fold it over. Bake for a yummy turkey pot pie.

Butter a casserole dish..
layer with Pieces of turkey..
top with stuffing
put gravy on top of that..
put in oven for 1/2 hour @ 350...
IT is great.. and only one pan!!

Your gonna laugh. I'm not sure why we call it this but, mom calls it **** on a Shingle.

You make gravy and mix your turkey in it. then make mashed potatoes and lay them out on your plate. get a piece of TOAST and cut it in half where the points are up. then poor gravy on it. its a one dish meal and its quick and great.

turkey salad.
chop some of the turkey
add mayo,chopped sweet pickles,salt and pepper to taste and stir.
spread on light bread or hamburger buns and enjoy
