Ok first. There is a distinction between PVP and Arena.
Some classes can do well in PVP but not so great Arena-wise.
Another thing you have to take into consideration is what part of the team do you want to do? Healer or Damage Do-er.
My main used to be a priest. Shadow priests, especially horde BLOOD ELF shadow priests are great for PVP and also arenas due to their mass dispells in arena (can remove most non-removable ailments) and also their mass silence racial trait. You'll be gunned for because of your clothiness in arenas and (sometimes) in PVP. However not as much as if you were a HEALING priest.
If you like healing and you want to pursue it in any pvp atmosphere, I highly suggest going with the Holy/Prot specc'd paladin.
In PVP, druids are always rather tough. However to be honest balance druids (oomkins) are a joke. Don't make one. Resto druids make great healers (Also speaking from experience, have a 70 restoration druid). Their HoT's are awesome for flag runners in warsong and NS for close calls = amazing. They also have an AOE heal spell that will attract a lot of attention, however heals for a ton a tick.
Affliction Warlocks are all over pwness. You throw dots up and watch things die. Great if you want to be a damage doer and wrack up kills in PVP. And arena teams especially duoed with a shadow priest = sweetness.
Rogues, iffy. It takes skill to really pull them off. Many arena teams don't really like them, too squishy :/ However you can do a lot of melee damage and live to tell the tale in PVP. But, no one really likes you.
I can't really speak much on the shaman as I have never played one. However I have met some amazing enhancement and elemental shamans who just dominate in arena and pvp.
Race is pretty important. WotF for Undead can get you out of practically anything and cannibalize regens health (helpful if you are low). Blood Elfs with Mass silence is amazing for snuffing out casters and healers. Mana tap too (for those pesky paladins) And Taurins have increase stam and Warstomp for interrupts and orcs with reduced stun chance. (Trolls nothing good, sorry!)
Anyways enjoy wow, its good but can get way too addicting. At least it did for me anyways :)

First off, props to you for picking Horde!
What you find as fun and how well it works is going to depend on you. Any class can decimate another class, but it depends on the person behind the character.
- Shadow priests are very fun in PvP; I wouldn't put any points into healing because you'd have to get out of shadow mode to heal yourself, and by that time, you're probably close to death.
- Druids are great. I wouldn't go resto if you were planning on doing PvP, unless you were planning on standing back and healing. Balance for moonkin form (pump up your intellect) or feral for others, like cat form.
- Warlocks can pwn easily; affliction and destruction would be solid choices.
- Rogues are the only characters I have trouble beating in PvP. I'd probably do more assassination/combat than subtlety.
- My shaman is specced for resto, so I can't comment on those builds, but I've seen some enhancement/elemental shaman in action, and they do pretty good DPS.
You should check out the racial bonuses when selecting your class, but ultimately, it won't matter a huge, huge deal. There are some benefits to undead and blood elves in PvP due to some racial abilities, but each race has its high points. Racial traits can make a big difference in WoW PvP play.
Forsaken - Will of the Forsaken, break fear effects
Blood Elf - Mana Tap, Arcane Torrent. Steal mana from opponents, and get back mana/energy, plus an AoE silence
Tauren - War Stomp, AoE stun. 5% Hp bonus
Shadow Priests can heal, just not in shadow form. They aren't as effective at healing, but do ok. Look to Holy/Disc builds if you want a PvP priest who's not shadow. Forsaken or Belf.
Resto druids are great for healing, blanace is tough to keep up in a PvP environment.
Aff Locks typically drain tank, with a succubus for DPS and CC. Not sure why you'd go without a pet. Without a pet, go BElf, with a pet, Orc.
Rogue a toss-up between Forsaken and BElf.
Shaman, I'd say go elemental and let the pallies and the warriors worry about taking the melee hits ;-)

I'd say Undead Warlock. They do an insane amount of damage, and they're fun.
If you're going for any healing class in PVP, people will take you out first, and as fast as they can. However, if you're thinking of making a priest, go for a Blood Elf.
Rogues are good in battlegrounds, usually, but not so much in arenas. If you're going for a rogue, I think Orcs make the best.
I my experience as both a mage and a hunter in PVP, the only classes I have difficulty with are warlocks and shadow priests, and those damn dots.

Shadow priest are deadly, but you shouldn't try to be both. It's hard to do both.
Unless you want to be just support, don't go with Restore Druid in PvP You'll spend more time healing and less time killing.
Affliction Warlocks are VERY nasty. If at ALL possible combine it with your sucumbus for maximum enemy frustrations.
I hated fighting rouges in the battlefields. They wouldn't stay still, they kept circling my character and chipping off hit points while I desperately tried to get them in front of me so I could cast at them. But note that a human of the same level can use their perception to see through stealth.
I don't have a lot of shaman experience so I'm afraid I can't answer that one.
As for races, both have very useful abilities. Undead can null fear (a major plus) and restore some HP from the bodies of their victims. Blood Elves can drain mana and throw out temporary silence spells at close range.

Really depends on your preference. Hunters if you do a mix of Marksman and Survival is pretty OP in pvp. Dk's, Warrs with bladestorm(I forget the tree it's in). It all depends on what you like playing most. And if you want to go battleground or arena.
