I guess it depends on the brands. You could probably use most of these interchangeably. I am particular about my hair though--wouldn't use just anything there.

Shampoo is for washing hair...
Shower gel is for your body...
and believe it or not washing up liquid is for washing up
;)

The scent and amount of moisturizing compounds mainly, they are all 'soap' in one form or another.
