Well most martial arts can be executed with lethal consequences. However, learning to throw knives, that's gonna be harder to find. Just do some research, pick a martial art and start learning it. After that, if you advance quickly, you can always pick another on top of it, and get a range of fighting skills. Be careful though, there is a general rule in most martial arts schools that if you do serious damage to someone without a good excuse, you can be banned from ever practicing it again.

If it hasn't bitten you, get it off ASAP. Shake your body part; they may try to hold on or bite if they see a hand coming towards it. If it did bite you, put on a tourniquet - if you can - then call 911 to have help come to you. Try to kill the bug or whatever so they know what they are dealing with. Otherwise, make sure you have a good description. A tourniquet can be made from a belt, a piece of cloth, even a plastic bag.

Insect, or spider, just flick it off. DON'T smack them; this could drive their fangs into your skin when they had no desire to bite. They don't want to bite you, they only do out of fear or pain. The bugs that want to bite you (e.g. mosquitoes and fleas) are not venomous. If they were, they would be killing off their food source; a bad move from their point of view.
Venomous snake, don't startle it or hurt it. You could just hold still until it moves away.
If you can flick it off with a stick or something (it will bite the stick, not you, you might try that. But this is probably more risky than holding still. Snakes don't want to bite you either, since you are too large to eat, and they will only bite from fear or pain.

You should know if you are allergic to bites or stings. Then you would need to be more cautious than other folks. Otherwise quit worrying about things like bugs and spiders. There are only a few than could be a health risk. Generally people get bitten when the are intentionally messing with the critter. These animals have no reason to attack people. Their reactions are self defensive.
