It is the carotenoids (which is the type of pigments) in their diet that changes them to a pink color.

It is not really a quick process either. When a baby flamingo is born they are a white fluff ball then start to develop white/gray feathers. Depending on the concentration of their diet it can take several years to be fully pink.

the pigment from the shrimp i guess transfers to the flamingo.

The same way that if you eat too many carrots or take too much vitamin C your urine turns orange.
