Not trying to use it an in aquarium... am curious if it is suitable to use it as a substrate for an animal that is PH sensitive.

Peat moss is acidic , around 3 or 4. It's one of the substances used to correct alkaline soil in gardening.

I don't think its possible for peat moss to have a pH measure. pH is a measure of the acidity or alkalinity of a solution or soil.
