find a theme, and go with it!
movie theme: candy, like redvines, milk duds; microwave popcorn; a 20 oz soda or two; you could also incorporate a dvd or movie rental gift certificate.
wine theme: bottle of wine; meat & cheese (get the kind that's non-referigerated), hickory farms type stuff; chocolates; crackers; you can put in a little cutting board or wine charms or the like
pasta theme: dried pasta (the colored kind looks nice), a canned sauce (or alternately most of the ingredients to make one's own), some special herbs, maybe some wine; a pasta spoon could be added, or a nice canister, maybe a cookbook. (or even a gift certificate to an italian restaurant)
you could do hot chocolates, teas, coffees, spiced ciders, and put extras in with it, like flavored syrup, candy canes, chocolate spoons, marshmallows, cinnamon sticks, honey sticks; and add a mug or two
candies & sweets are always good too, i usually put together tins full of a variety of fudge ("almond joy" & peanut butter & regular), german chocolate rice crispy treats, sugar cookies, no-bake cookies, pumpkin cookies, etc. a nice variety.

Some of the suggestions are a little strange, I wouldn't go with products for personel care, he may get offended and think your telling him he has B.O. You don't say your ages so I'm going to give you two. A fun and munchie basket. Load it with lots of good munchies. Then add a couple games some of the new TV games are a kick, maybe a jigsaw puzzle, (some are really fun, all marbles, all popcorn, etc.) Games can even be rented, don't forget to take them back though. Personal things could be his favorite sports magazine or car mag. either a subscription or the lates edition off the rack. If he's into a certain team a new baseball cap with the teams logo. A T-Shirt with something cool on it. My daughter took a picture of my son-in-law on his new motorcycle, one of him on his boat not the biggest but his, one on his ATV dusty and dirty with this great grin. and had them put on a shirt. Underneath the pictures it says "working on my toy collection". He loved it. If he is into a certain group or music a "t" with that on it. Okay a little older.... Make it a New Years Eve basket. A bottle of wine, two wine glasses, some cheese and a couple boxes of different crackers, some summer sausage ot peperoni, a couple apples or oranges. Nuts (in the shell) a nut cracker, a few small chocolates, (kisses) things your can feed each other. Next a pair of silky boxers and a teddy for you to wear, stop at an adult shop and pick up some eatable body paints. Loads of fun and definitely something to do together. Merry Christmas

hot chocolate packets? (in a Xmas Mug?)
sam's club has some gourmet hershey ones that are really good.
ooh! how about holiday napkins as the back drop ?
if they have pets ,you might even want to add a packet of treats for them,too.
...or would that make the basket smell funny?

Okay you won't have time to get those cards together so how about getting Symphony Bars. I love those things. Another thing if you want to spend a little are those things you shake and it snows. I love those things.

Cans of soups, veggies, packs of dried fruits or raisins, healthy snack mixes, jars of Marachino cherries (they're on the shelf at our local Jewel), boxes of cookies/crackers, cereals, boxes of pasta, boxes of teas, etc.
