I need a quick to germinate monocot plant, is possible. I don't want to use grass, because you typically plant grass in patches and I'm testing these plants individually. Does anyone have any ideas?

Actually, it's preferred that it germinates quickly, but not required.

And do you plants that could grow outside in this weather? I live in Illinois, it's not really SNOWING here, but it gets really chilly sometimes and warm other times during the winter.

Onions are monocots; how about using those?

Edit: I think onions might make it in the snow, as long as the soil doesn't get TOO cold. I don't know the conditions of your experiment, but if you're allowed to do so, you might consider putting a heating pad like a pet-bed heater under any pots that have to be outdoors.

I love experiments :)
You could try a Mazari Palm (Nannorrhops ritchiana). I believe it is one of the most cold tolerant palms there is.I hope you get some unexpected results :)
