Veteran's Day memorializes the end of World War I, which many would say was the most pointless cause of human suffering in the 20th Century. It is therefore a celebration of a war's end making it very compatible with the ideals of a pacifist.
The proclamation declaring Veteran's Day a holiday states as one of the day's purposes "rededicating ourselves to the cause of peace."
I think pacifists look at a day like Veteran's Day as a great chance to remind people of the brutality and horror of war. By reminding people of these harsh realities, a pacifist would hope that more people would come to the conclusion that wars must be avoided at all cost.

I'm a veteran and now a pacifist. Nations need a military to defend their borders so there's nothing wrong with joining and serving. Now some of the wars America has gotten involved with in the last decades are not honorable but that is the politician, not the soldiers, fault.

I would imagine that they're very sad about the waste of life and energy caused by war.
...heck, I'm not a pacifist, and I'm sad about the waste of life during war. Especially the one we're in now.
