Im currently contimplating a minor in psychology. I would like to know what career options do i have

It will only augment another degree, or help you get into graduate school. There are websites that would list a whole bunch of potential jobs, but they're mostly b.s. Minors get you nothing other than a resume-builder and a little extra knowledge. You'll have to get more schooling or take you chances climbing the ladder in the real world, but a minor itself isn't a ticket to anywhere per se.

I'd say bunk it up to a Major.

I do regret not taking Psychology as a main course back when I went to college. 3 years of Engineering!? Pffft!

Now correct me if I'm wrong, but maybe a reason behind you wanting to do Psychology in the first place might have something to do with wanting to know a little more about yours or someone elses behaviour (that's how I started at least).
Why stop with just a minor?

-not a lot. In fact, to do much with a major in psychology, you need to go on to get a Master's degree or Ph.D.
