I know there are several long distance routes through France, at least one going through Paris.

I am sure there are more, best go to a good map shop and see what they can show you.

I have not been biking on France, but my parents have, the last 25 years. That is from their 40's into their 70's.
And they did ride all over France, just selecting the route that suited them best.
Through their stories I know there are a lot of personal stories on the web already.

I don't know but I wish to do that on a motorcycle.

There must be more specialist forums and blogs for hobbies like yours.
