I would also like to ask at what month is off peak where hotel prices are cheap? what countries are best to visit?

From North to South the season gets longer.
In Norway, Sweden and Finland you have to be in the second half of June to early September to find the places open. High season is July and August.

In Portugal, Spain and Greece there are places that do not close all year round, they may have a slow time, in November and February and March, but they can also be busy all year round.

On average, in Europe, July and August are the school holiday months, so those are best avoided, unless you want to go to one of the smaller towns in Scandinavia.
Christmas to Easter is winter sport and winter sun season.

I think that May-June and September-October are the best times to travel.

The first time I went to Germany from the States, it was in September and my flight via Swiss Air was $500. The next June, I went to Germany again and the ticket was $1000.

I would say, fly to Geneva and visit Germany in September or Italy around the second week of Sept. We went to Bardolino this past Sept. and it was their off-season. The hotel we stayed in was $70 a night, and during peak it´s double. The best thing-there weren´t a lot of school aged children because they were back in school.
