Which would I believe in?

Our sun signs say we are not compatible(Virgo and Aquarius) but our chinese zodiac signs (Monkey and Rat) say we are the most compatible of all.

"Belief" is easy, knowing is not. It takes little effort and time to be a blind believer. Humans by nature are pattern seeking creatures and that means we can be gullible.
If you take the time to be objective and use the Internet, you will see evidence supporting astrology is lacking. It can and has been tested. The results are it works no better than chance.
Your question shows major flaws. More than one system and consistency. Compatiblity is based on birthdate is a bigoted concept. No one has control of this and to prejudge people like this is bigotry akin to racism.

Virgo and Aquarius-this is possible but Virgo must be more tolerant and less critical Aquarius is very intelligent and don't try manipulating or cheating this sign when u do this then he (she) can live u and also give him(her) more space for his freedom this 2 signs are highly intelligent and Virgo is more practical and Aquarius is more creative and often have genial ideas but they need more talk about their true feelings

Does your heart and your partner's heart say that your compatible? If so, ENJOY! If not, find someone else.......and don't live by those dumb sun signs, those are ancient Chinese thingys that aren't true here in America, they're just for fun!

astrology never made any sense to me, and never fit my sign, even though i like the animals in my signs. my sun sign is leo the lion, and my chinese sign is dragon. but they still dont affect me. so i dont follow that stuff. but rather i follow God and His Signs for me. He makes more sense and is more helpful in these matters.
