How long do eggs last? Fresh eggs in the shells will keep in the frig 4 to 5 weeks. But I will still test eggs in a pan of water before I use them, and if they float, throw them out.
Hard cheese will last 3 to 4 weeks after being opened in Frig.
If I freeze steak, how long will it last. 12 months the farm extension person says. But I have to think that is if I wrap it well in freezer paper and tape.
Fried Chicken can be kept in the freezer for 4 to six months,
And I understand if I leave on a trip, I can freeze any eggs I have left in the carton, by cracking them, beating them and storing them by three in baggies. To use in cakes later.

Anne, your right on the money...
When we buy in bulk... we will be buying turkeys soon. I double wrap them in a paper bag, they last longer this way. I do this with loafs of french bread too,as it helps to prevent freezer burn.
It's not unusual for us to cook up 20lbs of meat then freeze it into dinner size portions. We do this with chicken too. Saves time in the kitchen on a daily basis. We kind of like catching the sales and stocking up. I try to rotate what is in the freezer, newest in the back oldest in the front. It's a pain but it works.

i don't know about freezing. I worked on a chicken farm for 4 yrs. I would presume if you froze thecegg, the shell would split. But as for eggs you are using, a fresh egg will hold its shape. Like, the yolk will be full and round. The older the egg gets, the thinner the white will get and the yolk will begin to spread out a bit and lose height. I f you break it easy and the yolk runs, its no good. As long as the yolk stays within its fold, its ok. Or if the white just runs all over too, But that would probably happen at the same time the yolk ran. Probably didn't help much. did i.

I don't risk taking a chance with the sell-by date for eggs, so I use them up by that date, or I discard them. For the price of a dozen eggs, I'd rather be safe than encounter salmonella.
Apparently, frozen eggs can be kept in the freezer for up to one year (but I would suggest no more than 4 months). I've tried freezing them (without the shell, in small plastic containers) but the egg yolks didn't seem to be the same when thawed, but they were OK when used for baking, etc. I'm attaching a couple of links to sites regarding egg storage.

I know this doesn't really answer your question, but I would suggest freezing the eggs in ice cube trays after you have beaten them. Then after they are frozen, store them in plastic bags. This way you pretty much can tell how many eggs you are using, not just three at a time, since each cube equals about 1 egg.

I get so many free eggs off the farm and can never use them all fast enough so now I can use the freezing method to preserve them longer. that is great .thanks
