Hmm....without knowing any more specifics...
--Do you really *know* what you're looking for? Exactly? Lots of people say they're picky, but then they don't recognize what it is they seek until it's too late. So, do you know what you are looking for *well enough* that you'd spot it immediately on sight?
--"can't seem to find" is a little bit different from "not finding at all". No, it's not just a nitpick. The wording of your Question rather implies that you aren't trying so hard to find whatever it is you are looking for. Maybe you look in the most obvious places, or maybe you just let your friends tell you where *they think* it is....
But you're really not putting in the work. Seriously. Have you ever *seriously* looked for something in the fridge? As in, you search *every shelf*, both on the door and inside, then both on the door and *inside the freezer*, then in the crispers, also reaching up deep inside of them where you *can't* see because the drawers never come all of the way out?
Or do you do what most folks do, when they assume that they "know" what's in there? Do you just open the door, glance at the top shelves, only look at the first places that fall under your natural gaze? ^_^
This is a bigger problem than you think. Many *many* stores are designed to confuse people, to trick them into buying what the *store* wants them to buy, versus what the shopper wants. One trick that is commonly used is to play the shelf game: put all the popular items or sale items on the bottom and top shelves, while the poor sellers and stuff near its expiration date lies right under your natural gaze, somewhere just under the middle.
And life does this too...really, if it were *in* the natural, obvious places, you wouldn't be here, would you? ^_^ It follows that it's in some place *not* natural or obvious to you.

Because the little gremlins that hide your stuff are @ssholes like that. That little mofo hid my car keys in the refrigerator the other day, took me hours to find them.
