You ask a lot of questions. There are only 2 types of organisms in food chains: producers and consumers. Producers are always first because they start the food chain by getting energy from the sun. That leaves the consumers to be last on the food chain.

They are last because nothing eats them. Thus, the chain stops with the consumer.
