Typically if there are stats on the back that list years, the cards are from one year following the latest date. If your card lists Jorge Posada and the last year of his stats on the back is listed as 2001, then the cards are 2002 issue.

Goddess has described the best method -- find the last stats and add one.
You can also scour around, usually on the back, for the tiny copyright notice. If you find, for example, "© 2000", then the card is either a year 2000 card, or a very late 1999 card (predating copyright is rather common).

Celestin gives good practical advice. Another is to go to Beckett.com and type in the players name and the # of the card (all card sets are usually in numbered order). So unless a player has multiple cards with that number (highly unlikely) you should be able to tell what year it is.
