I like "cutler" but cutlery is for a hand utensil used with food. A spoon is cutlery but knives meant as weaponry aren't.

"Haberdasher" used to be a retailer of many accessories, including swords, knives, mousetraps, crucifixes and all kinds of crap. But in modern times, it's for sellers of clothing accessories like ribbons, buttons, hats and gloves.

I don't think there's a special, specific word for it like "fishmonger" or "apiculturist" (beekeeper). You could view it as a specialized type of arms dealer, but that usually means guns, etc.

"Knife seller" may have to do.
