some shows are on for like 2 years and they have like 7 seasons, while other shows are on for like 7 years and have 7 seasons. WTF?

Traditionally, a season was all the episodes of a show that air between September and the following summer. In recent years, that's become a bit fuzzier, with some shows starting midseason, or skipping years (esp. for those on premium cable channels), or having multiple story arcs in one year. Fictional shows (that is, scripted sitcoms and dramas) still mostly follow the traditional formula, where one season = one year's worth of shows = one contract with the network.

For reality shows, they'll often have multiple "seasons" in a year - in those cases, a "season" is usually defined as "one series of shows with the same characters/competitors", and ending when a winner for the competition is chosen. These seasons are usually shorter (12-15 episodes, vs. 21-26 episodes for a scripted show), thus allowing 2 or sometimes even 3 seasons to air in a single year.

It all depends on how many seasons and/or episodes they get approved for. Most shows will film an entire season in advance.
