I read that mixing steel fittings onto copper causes corrosion .... is brass alright to use when connecting copper valves and pipes?

yes brass is ok many fitting and faucets are made out of brass, and are directly connected to copper pipe. however no black or galvanized pipe should be connected to copper.

Brass and copper are fine to use together. You don't want to mix brass or copper with steel fittings or pipe. This causes electrolosis which is a chemical reaction between dissimilar metals.
