The movement of the sea is influenced greatly by the moon, the season, the winds, currents above the earth, currents in the seas.
The best way to predict the kind of sea to expect will be to touch base with the weather station, read the farmers almanac, ask an experienced sailor, look at the position of the moon in the calendar etc.

A calm day would mean a quarter moon, no north or west winds, no squalls predicted for the next 48 hrs.

The sea might be flat as a sheet, or simply rippled. It would be beautiful and it is a good day to sit down and read a book.
All other sea activities require some wind. to be enjoyable.
