You cannot remove the chimney breast from any room without removing the chimney pot and stack on the roof then the following parts as you move down through the house, if you just remove the down stair breast then what is going to support the upstairs and the stack on the roof, its not a job really for a DIY'er even a very established one get the builders in.

Pity Chimnet having her breast removed. No seriously. the chimney does right through all floors to the roof. Take away the ground floor breast and there will be no support for the remainder of the chimney above. Get a builder to do it, and to put in an RSJ or concrete support as necessary. Unless you know what you are doing, you could run into lots of trouble...

The chimney breast is normally of 1 brick wide built into the main Jack wall with concrete type flue liners internally and lintel supporting the fire opening. If property built before 1960 be aware of possible asbestos flue linings Need to be removed by specialist.
Investigate whether the 1st floor joists are bearing into the breast, if so then support the ceiling by using acrow supports and boarding. Take down the breast upto and within the joist level. Fix steel gallow brackets and plate to support the breast above. Reinstate any brickwork above the steel plate. Sand/cement render to the exposed wall and plaster set finish on completion. Good luck

the chimney breast is the heaviest part of a house ....it acts as an anchor for stability ..look at the photos of Hiroshima after the bombing ..only the chimney breast remained ...so unless you are prepared to support the breast properly ..then leave well alone ..just throwing a trimmer across the joist will not do ..best to remove from top to bottom

Hire a tool called a strong boy and tow acros, bash out a line of mortar as high as you can stick in the strong boys wind up the acro props to support the rest o the stack above, then bash out all remaining bricks, fit a lintel to hold up the bricks above remove strong boys and props and job done

You'll also need somebody from your local Council to come in to check your proposed structural changes are safe.
Wouldn't want your house falling down now would you?
