I am not sure this is what you are looking for but here it goes.
I love Enya and Sade for their mellow sounds and wonderful lyrics. I also discovered E.S. Posthumus but they have hardly any lyrics, mostly nice mellow sounds and beautiful arrangements. They produce a lot of movie soundtracks so you have probably heard a lot of their music already.
Other than that I stick to movie soundtracks like Lord of the Rings and other epics.

system of a down does but it isnt exactly mellow .... it has very meaningful lyrics... hard to tell tho cause u have to listen really good like boom for example go to lyrics .com and look up "boom" "B.Y.O.B"(bring your own bombs) "ariels"
