I've seen all of the first four, and part of the last two anime that you have mentioned, so I think I have a good idea for what you are looking for. Trinity Blood (http://myanimelist.net/anime.php?id=27 ) and Blood+ (http://myanimelist.net/anime.php?id=150 ) are both vampire anime that have a decent fan base, but personally I thought they were just mediocre (I liked Hellsing Ultimate a lot better). If you are looking for vampires though, they may be just what you are looking for.
Tsukuyomi -MOON PHASE- (http://myanimelist.net/anime.php?id=343 ) is another vampire anime, but it isn't very violent. It's more like a cutsie show like Chobits was, but with vampires.
If you want something really similar to Chobits, I suggest DearS (http://myanimelist.net/anime.php?id=63 ). To me they were nearly identical, except DearS dealt with an alien instead of a robot.
As far as general recommendations for some really good violent anime, my number one suggestion would be Baccano!(http://myanimelist.net/anime.php?id=2251 ). To me it is one of the most amazing shows ever. The storyline is told in a very unique way and the characters are very memorable. Don't let the first episode fool you (especially the first half). It goes on to a completely higher level in terms of suspense and fighting (and amazing comedic relief) once you get a few episodes in, and especially the latter half of the series.
I'd also throw out Gantz (http://myanimelist.net/anime.php?id=384 ) as a good violent anime. The ending was a little bit lackluster, but there was plenty of good stuff in the middle. And if you read the manga, you DO get to see some vampires integral to the plot in latest releases. And as a warning, you should know that there was some nudity and sexual situations in Gantz, but if you were fine with Elfen Lied, you should be fine with this.
