It is called a "Backset" There are different sizes (lengths) 23/8 23/4 5" throws. There is also an adjustable one that goes from 23/8 to 23/4" Plus there are ones for exterior doors, and ones for passage doors only. The ones that are made for exterior door, now have a extra little slide bolt on them. That prevents people from slipping a credit card into it and releasing the bolt. There is also different thicknesses of shaft on the bolt. You can't just go and pick up one,,you need to know what kind or brand the door lock is. Kwikset will only fit Kwiksets, Schlage only Schlage, Westlock only Westlock. Take you old one with you, or make sure to bring your house key if that's the lock you need the backset for. The salesperson will be able to tell by your key which you need to get. ( if they can't their idiots) Byee and the plate on the frame of the wall is called a strikeplate .

RE:
What is the name of the part of a doorknob that clicks into the hole in the wall when you shut the door?

It's the latch.
On an internal door it's called a tubular latch.
The 'hole in the wall' is usually set into the door frame and the small metal plate is a 'keep-plate'.

The 'bolt' is the part the moves into the door frame when you turn a key or, in the case of a bathroom, when you turn the 'turn-key' which is not a key but a means to lock the door without using a key.
