"to master the taste of something" like people do it with cheese. yea i know this is a stupid question but i need to know the word!

The word would be connoisseur - it actually comes from the french, connaitre, which means to know. So the person who is a connoisseur is one who knows -- either about the taste of cheese or wine, or about art, or about whatever field they have declared themselves to be experts in.
And it isn't a stupid question - stupid would be if you didn't ask, and used a wrong word because you were guessing. Now you've learned a new word....
