I was reading it and they have an item called Walt's Favorite Fried Shrimp....and it says they are fried to order. Is there a certain way shrimp can be fried? Like I know you can order a steak rare or well done or however you want it....is there something like that with fried shrimp too?

No to being cooked rare or well done. Shrimp is usually rolled in flour , corn meal, or bread crumbs and deep fried in a cooking medium. They are a delicate meat which require very little cooking . Walt's Favorite probably refer to the fact that no shrimp are precooked . In other words they are cooked only when an order has been placed for them.
