I have been accepted to the university I've always wanted to go to and will be attending Spring 2008.

I've already registered and paid for orientation, reserved parking decals and sent off all my immunizations and everything else.

I am a transfer student, and I assume the grades that I will finish up this semester will be really good.

Problem is I am something of a worry wart when it comes to my future schooling...

Would it be possible for the University to defer my enrollment or un-accept me after I've already been accepted?

They will not do anything like that without cause. As long as you complete your current classes and don't get caught committing any major felonies, you should be OK.

Only if all of your grades suddenly turn into Fs somehow, and since you say that's not going to happen, you're all set. Congrats!
