Have you ever seen "Good Eats" on Food Network? It's cooking plus science.and can probably answer your questions. The episode about Lemon Meringue is called "I Pie". If you get that channel, the second link lists upcoming airdates. If you don't the third link has a transcript that's a bit confusing but still informative.
