If the moon was actually blown up somehow, a good bit of it would be shot off into space, and a good deal would come raining down on us in the form of huge flaming chunks of moon-rock. The rest of the fragments would remain in orbit around the earth, like our very own little asteroid belt.

As others have said, there would be no tides. Also, with the Moon gone, the Earth/Moon system would suddenly weigh less, so it would shift in its orbit. This would cause large changes in the weather patterns, leading either to floods or droughts, or another ice age, possibly permanent.
Not pleasant outcomes.
It is a common theory that it is the Moon's presence which gave the Earth both the stability and dynamics to allow life to begin, so its absence may well lead to at least the larger life forms to die off. The oceanic plants and bacteria may well survive, as they may be rapidly breeding and adaptable on an evolutionary scale.

There would be some wacked out floods. The moon controls the tides, but I'm not entirely sure what would happen if the moon just wasn't there.

What the hell are people saying about the Earth shifting its weight and going out of the Sun's orbit? The moon's orbit is because of the Earth, and the Earth's because of the sun. Nothing would happen to the Earth's orbit if the moon died.

Then, thats the end of the earth too.. Coz there is a gravitational force between earth and moon... without that existence of force... earth will get out of its track (the track in which it revolves around the sun)...
Forget about the humanity, forget about the earth after that..
its nice, that the moon is still there..

Well, we would lose the tides, which are caused by gravitational attraction between the moon and large bodies of water. I think it would also affect the internal structure of the earth.
