The Appalachians were formed when continents collided in the forming of Pangaea(the super continent). In fact the upper part of the Appalachians is in northern Europe. Thus they date back to before North America was even a continent. The Rockies formed from tectonic shifting once N.A. was split away, thats why they are still tall and sharp in comparison to the Appalachians

The Appalachians are older because of erosion and weathering. So perhaps eons before, they were as sharp and tall as the Rockies are now.
