"My brother is dead" or
"My brother... he's dead..." the trailing ellipsis meaning the character is still thinking but not finished with their thoughts.
Hyphen would be like
A says "My brother-"
B says "-he's dead. I know."

Generally the pause in reading is less than a second. If you want the reader to pause for more than a second then insert descriptive text in between to show what they are doing.

"..." can be used in a quote, like if you dont want to say the whole thing you would do this, "...and the guy said hi to me" or you can use "..." when you want to take a small break in the writing like, " i said...blah blah blah". dot dot dot, can be used in a writing piece that leaves you hanging.. such as, "and then the gun went off..." i personaly use "..."ALOT cuz i think it gives voice to your writing. i hope this helped. =]
