You could write about how you were influenced by something. (Books, movies, family, culture, ect.)

You could write about a significant event in your life. (Graduation, baptism, general turning point or event that impacted/changed you...)

Or you could write an interesting anecdote, and draw it out into a full length essay.

I would write about my visit with my doctor the other day. Dr.Jellyfinger whos fingers always seem to grow just before the prostate exam. And how he's never even bought me dinner, much less stuck around to cuddle.
