The design of "that thing in the middle of the tub" will take the clothes that are sitting on top of the wash to the bottom in a circular motion, stirring them up in the process. The stirring up is agitation.

The agitator is the main part of the wash machine operation to clean the closes
Its what creates bubbles in the wash machine
The cycle tell the agaitator what speed the wash machine should it spin at slow/slow - hand wash items, slow - delicates, normal jean, heavy duty - large load
Just remember to keep your hands out of agiatator when in use it can cause serious damage if your not care full so use caution similar to cecling fan highly dangerous in use.
