I am hosting a Scandinavian exhibit at my school's international festival next month. I need suggestions for kids activities and easy food recipes, as well. I was thinking of having Danish hot dogs but can't seem to find a store in the US that sells them. Could someone help me with suggestions?

Well, Lego would be an obvious choice for kids' activities, as well as HAMA beads. Depending on how much space and time you have there are other games like "kick the can" (a type of hide and seek/catch) or "poisoned earth" (mostly for younger children).

Danish hot dogs is a good idea, but yes, it's usually difficult to find the right ingredients. Can you get frozen "æbleskiver" where you are? Serve with icing sugar, sugar and jam...the kids usually love them. Otherwise, if you have the possibility to do some cooking of your own, Danish Frikadeller (meat balls) have been a hit with all my foreign friends and family. You can "fry" them in the oven to save time and effort and freeze them until you need them (heat up before serving). Serve with cold potato salad with chives, onions and creme fraiche - otherwise there's always Danish cookies or pastries/cakes served with hot chocolate with a dollop of whipped cream.

(Should you need it, I'll be happy to help with more suggestions and/or recipes.)

Alternatives to Danish hot dogs if you can't find them: Swedish Meatballs: http://allrecipes.com/Recipe/Swedish-Meatballs/Detail.aspx (This recipe can be adapted to whatever amount of servings you wish to make.)

Norwegian Lefse: http://www.lefsetime.com/all_about_lefse/lefse_recipes.php

Activity ideas:

This site has coloring pages of the flags of Scandinavian as well as a map of Scandinavia. http://www.enchantedlearning.com/geography/flags/scancross.shtml

While searching around the sight, I found the Swedish category had different coloring pages for farm animals, people and families. The names of each item is listed in the Swedish and you try to place the correct name with the correct picture. For example the correct name for "pig" would be "gris." or the correct name for "girl" is "flicka." Unfortunately, only Swedish is done this way. I didn't find anything similar under Finland, Norway or Iceland but the idea could be adapted for whatever language you want. http://www.enchantedlearning.com/themes/swedish.shtml

never heard of danish hot dogs, and i'm danish!

appleskivers is more like it.

I saw martha stewart make some sort of traditional swedish woven paper tree ornament.

Other than that, try the library, troll the internet and go to ikea.

Well, Scandinavia covers a few different countries so you might want to look each up separately as "Swedish crafts how to make" or "Danish crafts how to make", etc.

Here are some Google results for Scandinavian crafts though:

And here are some results for "Scandinavian recipes" adding "kids" or "easy" too, but again I'd Google "Norwegian recipes kids" or "Swedish recipes kids" separately too:
