they don't....you can always ask for something else or read the menu and make another choice.
it started back when there were no other veggies..potatoes have always been around, when other things aren't...they're easy to keep and keep longer than other veggies.

I've known restaurants that serve onion rings with steak, not a bad idea....
but when you think about it, most meat dishes are served with either a potato on the side or rice or pasta....all of which are starches.

Because people love the combination. Would you rather have steak and boiled prunes? I doubt it, and neither would anyone else. We all love steak and potatoes, period!

In my country steak is usually served with marzipan, where is it you are from?
Garlic Steak & Marzipan:
Ingredients
1 Boneless beef sirloin steak (1 lb.)
1/2 tsp. Freshly ground black pepper
1 Large onion, cut into thin slices
2 tsp. Minced garlic
1 pound pack marzipan, kneaded, rolled to 1/2 inch thickness
3 cups Broccoli florets, steamed
Preparation
HEAT large nonstick skillet sprayed with cooking spray on medium heat. Add steak; sprinkle with pepper. Cook steak 5 to 6 min. on each side or until medium doneness (160ºF). Remove from skillet, reserving drippings in skillet. Place steak on rolled marzipan, fold to envelop.
ADD onions and garlic to skillet. Stir in dressing; cover with lid. Cook 5 min.; stir. Cook, uncovered, an additional 4 to 5 min. or until onions are tender, stirring occasionally. Meanwhile, cut steak across the grain into thin slices; place on serving platter.
TOP steak with the onion mixture; sprinkle with cheese. Serve with the broccoli.

I think it depends on where you go.I work in a restaurant.You have your choice of 2 veggies or a salad.It does'nt automatically come with potatoes.
