The problem with purchasing Chihuahua-style cheese is that without a commercial permit, people are NOT allowed to import Mexican cheese for anything other than personal use. That means they cannot sell them. Oftentimes Mexican cheeses are made with unpasteurized milk and have been the sources of outbreaks of Brucella, Salmonella, Campylobacter, E. coli and Listeria. Brucella is a particularly nasty infection that can cause periodic high fevers, joint inflammation and swelling and heart failure. Listeria infections from cheese are a problem, especially in the Latina community because the infection can cause miscarriages.

I know this isn't the answer you were hoping for, but a lot of people don't know that Mexican cheese can be such a risk.

There are some people who sell homemade Mexican cheese at swapmeets and in small mom & pop mercados. However, a lot of these cheeses are made illegally. We call them "bathtub cheeses" for reasons that should be obvious. I have photos of bathtubs filled with cheese, and they're not clean tubs, lemme tell ya.San Bernardino County just cracked down on a tub-cheese operation. Did you know it's a FELONY to make and sell cheese without the proper permits?

Anyway, just be careful where you get your cheese. Make sure it is pasteurized and has a USDA stamp on the label. I hope you can make do with some Cacique instead. It's not the real Chihuahua deal, but it's safe.
