Starch is a large, large molecule. Its too big to pass across cell membranes so we digest it by breaking it down to small monomers of glucose

Starch exists only in plants. Because starch is insoluble, animals have to digest starch to glucose, which is then transported to other parts of the body. In animals the storage form of carbohydrate is glycogen.

starch is a polysaccharide which is too large to be used by the body therefore it is broken down to maltose (2 glucose molecules) by amylase. this smaller molecule is then able to travel and be used for energy
fyi photosynthesis only occurs in plants; this is the process that produces the starch that was digested.
