some teams like the florida state seminoles or ohio state buckeyes have little stickers on the players helmets...what do those mean?

The players get stickers when they make a good play or do something outstanding. If you are ever watching a Buckeye game watch for Jame Laranitus. Possible the best linebacker in college football will most likely have more stickers on his helmet than anyone else on the team, or defense.

They give them one of those stickers for ever time the player actually attends a class.

They are given as "rewards" for doing good things on the field. they are a reward for good play.
