For my first psychology research paper, I did the effects of television advertisements on children ages 4-10. I found tons of research articles to reference. Try going on FirstSearch and look by topics. Any topic can make a great paper as long as you enjoy the topic enough to dedicate some time to it. Maybe you can find a topic in your minor you'd like to know more about and look up some articles on it.

Okay, so pick something you like or something that interested you that they said in class. Is this a specific psychology class or general psyc? You can do a powerpoint presentation to go along with it. I just did a health psyc class paper and presentation on fetal alcohol syndrome.
