It's full title is the "Fruit of the Tree of Knowledge of Good and Evil".

By eating the fruit, Adam and Eve were able to decide between good and evil and therefore set themselves up to be like God and understand what sin is.

Different religions treat this in slightly different ways - Christianity sees this as the "original sin".

God created humans to love. But love is only real when someone has the option of not loving. God told Adam & Eve that He loved them and had created the garden for them. There was only one rule which they had to follow to show their love and that was to not eat from the tree. God warned if they did they would die. The punishment for sin is death. Sin is going against the Creators command. Satan mislead them by saying they wouldn't die but would become like God himself. God still loved them even after they did the one thing he told them not to, and their decision destroyed everything by it. So that's why God started creating sacrifices for them and their children to follow so they could pass their sin on to an animal and hence avoid death. Only something that was innocent could take the guilt for the human to avoid the punishment. Finally the ultimate sacrifice was made when Jesus lived a perfect life and took the guilt of the world with him when He was crucified for all of our sins.

In my own opinion;
The expression of free will is the only answer that makes sense if you accept the premise that God is all-seeing, all-knowing.
If that premise is accepted then it is logical that God knows, that Adam & Eve will eat the fruit, in spite of the edict prohibiting it.
On a more metephorical level, it would signify the transition of humanity from the level of an animal (no sense of right or wrong) to that of a being that understands & incorperates moralitly in its perception.
