Could stay with a light gray.
or an accent color such as mauve.
What other colors do you have in the bathroom?
Pick one of those colors in a light shade.

With all due respect I personally enjoy the "Grotto" look. My entire bathroom is done in terra cotta tile.

If you have adequate lighting, and the bathroom isn't oppressive in its darkness; you might look at "VEINS"/ colors in the stone, such as the "off whites" that exist naturally, and paint what walls remain in that.

COLOR choices are as personal as religion or politics; and very individual in answers you might get in personal opinions.

"Neutral" will be a NON issue, no matter, and accents can be YOUR choice in color; etc. I might have done the entire bath in the tub wall granite. The other addition you can decide on is "lighting" and how it affects to overall look of that room.

I know you said paint--but have you considered wallpaper?

My kitchen has black granite, black and stainless appliances and copper colored floor tiles. I couldn't decide on a wall color for paint--but finally thought of wallpaper and found one that has no discernable pattern, it looks like marble, and it has those colors in it on a slightly iridescent background--it worked great with all of the black and the gray of the stainless. I found a mosaic border paper with the same colors and it pulled it all together.

I have wallpaper in both of my bathrooms--it's been up for eleven years and is still in perfect condition, so don't worry about the steam with the wallpaper.

off white or extremely pale gray....I would keep it light since you have the darker colors. You wouldn't want it to appear small and closed in.
